Gluten-Free Meal Prep in Toronto: How Dietary Restrictions Became My Specialty

I have Celiac disease. I was diagnosed years before I became a chef, and it changed the way I think about food entirely — not just what I eat, but how I cook, how I shop, and how I talk to clients about their needs.

‍It's part of why I started Greens and Dreams. And it's why dietary restrictions aren't an afterthought in my kitchen. They're the foundation.

‍The Problem With "Gluten-Free Options"

‍If you've navigated Celiac disease or a serious gluten intolerance, you know how exhausting it is to eat out. You ask questions. You explain cross-contamination. You watch the server's face go blank. You order the salad and hope for the best.

Meal prep services aren't always better. Many use shared equipment, shared facilities, or simply don't take the time to understand the difference between "gluten-free by accident" and "gluten-free by design." ‍

What I offer is different: I cook in your kitchen, with your equipment, using ingredients I've personally sourced and verified. There is no shared facility. There is no risk of someone else's bread crumbs ending up in your food.

What Gluten-Free Meal Prep Actually Looks Like

A typical gluten-free week with Greens and Dreams might include:

Breakfasts and snacks

  • Almond flour banana muffins with dark chocolate chips

  • Chia pudding with seasonal fruit and toasted coconut

  • A big batch of granola made with certified gluten-free oats

Lunches and dinners

  • Crispy rice paper rolls with shrimp, mango, and a sesame-lime dipping sauce

  • Roasted chicken thighs over a warm lentil and roasted vegetable salad

  • Thai-inspired coconut curry with jasmine rice and wilted greens

  • Zucchini noodles with slow-cooked bolognese

Everything is naturally gluten-free — not a substitution, not a workaround. Real food that happens to be safe for you.

Beyond Gluten-Free

Gluten is the most common restriction I work with, but it's far from the only one. Other dietary needs I regularly accommodate:

Dairy-free — whether by choice, intolerance, or medical need, most of my meals are naturally dairy-forward or easily adapted.

Low-FODMAP — for clients managing IBS or digestive conditions, I'm familiar with the protocol and can build menus that don't trigger symptoms.

Diabetic-friendly — focusing on lower glycemic ingredients, lean proteins, and balanced portions to support blood sugar management.

Nut-free — I take allergies seriously and adapt accordingly.

Anti-inflammatory — for clients dealing with chronic conditions, I lean into ingredients like turmeric, ginger, omega-3-rich fish, and plenty of colourful vegetables.

The Intake Process

Before your first cook date, we talk. I want to understand not just what you can't eat, but what you love — because restriction shouldn't mean sacrifice. Some of my most creative menus have come from working within tight parameters.

You tell me what's off the table (literally and figuratively). I build around it. You end up with a fridge full of food you're genuinely excited to eat.

Who This Is For

‍People who were recently diagnosed with something — Celiac, an allergy, a condition — and are still figuring out how to cook for themselves. Having a chef take over even a few days a week removes an enormous amount of stress while you find your footing.

‍People who have been managing a restriction for years and are just tired of eating the same five safe meals on rotation. They know what they can eat — they just want someone to make it interesting again.

‍People managing a family member's needs — a child with allergies, a parent with dietary requirements post-surgery or post-diagnosis — who don't have the bandwidth to research and execute every meal themselves.
